Question on Self Defense in Florida?

my question is this:

in the state of Florida–what right does a person have to defend themselves from being attacked by an “off duty” corrections officer or any Florida Department of Law Enforcement employee who is off duty?

The same rights you’d have if they weren’t cops. But be warned: Even if the leo is absolutely in the wrong, you’d better have lots of witnesses and a really good lawyer before you hit him. Video would also be a plus. And expect no help from other law enforcement, cops stick together.
